Receta Ceviche Camarones y Tilapia.

INGREDIENTS
For the shrimp water
12 ounces medium shrimp, peeled and deveined
1 bay leaf
1 Red onion, halved
2 garlic cloves, peeled, whole
5 peppercorns
1 Jalapeno sliced lengthwise
1tablespoon salt
For the Ceviche
1½ pounds tilapia filets (you can also use other kinds of fish with a firm texture, such as grouper, sole or sea bass)
2 red onions cut into long, julienned
2 garlic cloves, minced
1 teaspoon ginger, very finely chopped
½ finely chopped chili pepper (ají limo)**
Salt and pepper to taste
2 teaspoons extra virgin olive oil
¾ cup lime juice
¼ cup lemon juice
2 tablespoons finely chopped cilantro
Special equipment: a bowl of ice water
PREPARATION
Cut fish in to small dices and place in a glass bowl
For the shrimp water: Add bay leaf, red onion, garlic, peppercorns, salt, and jalapeno to a medium pot of fresh water. Let boil for 5 minutes. Add shrimp and lower heat. As soon as they turn pink, take them out of the pan, drain and place in a bowl of iced water. Let cool, drain and cut in half. Add to the diced fish.
Add the rest of the ingredients to the mixture: onion, chili, garlic, ginger, salt and pepper to taste, and olive oil. Mix well.
Add the lime and lemon juice. Let fish cook for at least 5-10 minutes. Adjust seasoning and sprinkle with cilantro.
**You can find the Peruvian chili pepper and ají limón in Latino stores. Jalapeño pepper is an acceptable substitute.

INGREDIENTES
2 lbs de filetes de tilapia (o algún otro pescado de textura firme como el mero, lenguado o corvina)
8 oz de camarones medianos, pelados y desvenados
1 cebolla roja en juliana (tiritas largas delgadas)
1 diente de ajo cortado en trozos pequeñitos
1 cdta de gengibre, muy picadito
¾ taza de jugo de limón verde
1/4 taza de jugo de limón amarillo
½ ají limo picado muy finitamente*
sal y pimienta al gusto
1 cda de cilantro picado finamente
2 cdas de aceite de oliva extra virgen
PREPARACION
Cortar el pescado en dados pequeños y ponerlos en un recipiente de cristal.
Cocinar los camarones colocándolos primero en una cazuela con agua hirviendo hasta que empiezen a tomar color, inmediatamente remuévalos de la cazuela, escúrralos y colóquelos en un recipiente que tenga agua con hielo.
Déjelos en el recipiente de uno a tres minutos hasta que se enfríen. Escúrralos y añádalos al pescado.
Añada la cebolla, el ají, el diente de ajo, el gengibre o kion, la sal, la pimienta, el aceite de oliva, el cilantro y revuelva.
Agregue el jugo de los 2 limones, espere 5 minutos y vuelva a ajustar la sal.
*El ají limo se puede adquirir en tiendas latinas. El jalapeño es un sustituto aceptable.
